The curd is churned bi-directionally using a wooden bilona to extract sweet cultured butter.
Butter is slow-clarified in brass containers over open fire clay furnaces to produce grainy ghee.
Each batch is lab-tested for moisture levels, trans fats, and acidity markers before approval.
The golden ghee is poured into sterile glass jars, batch-labeled, and securely dispatched.
