Milk is set overnight into fresh curd using a traditional starter culture in clay vessels.

The curd is churned bi-directionally using a wooden bilona to extract sweet cultured butter.

Slow cooking over clay

Butter is slow-clarified in brass containers over open fire clay furnaces to produce grainy ghee.

Each batch is lab-tested for moisture levels, trans fats, and acidity markers before approval.
